Here you go, seafood lovers! This is a great meal to prepare to have for lunch for next 2 or 3 days. If you’re a shrimp admirer, you’ll love this quick and easy recipe!

Ingredients:
1/4 cup red onion, chopped
2 limes (juice only)
1 teaspoon of olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb cooked & peeled shrimp
1 medium tomato, diced
1 avocado, diced
1 jalapeno, finely diced
1 tablespoon cilantro, chopped
Leafy greens/spinach


Combine 1/4 cup chopped onion, juice from both limes, 1 teaspoon of olive oil, and 1/4 teaspoon salt/pepper together in a small mixing bowl. Leave sit at least 5-10 minutes to fully marinate. In a separate bowl, combine shrimp (chopped into bite size pieces), avocado, tomato and jalapeño. (Be sure to remove the seeds from the jalapeño.) Add the marinated dressing to the shrimp mixture. Top with cilantro and add over a bed of leafy greens or spinach.
As you can see this is SUPER SIMPLE and is a quick go to meal!
