Creamy Tuscan Garlic Chicken

This is one of our favorites! Add a roasted vegetable medley or a caprese zuchini salad to the side for a complete meal. This one is perfect for a date at home accompanied with a glass of chardonnay! 

(Though remember, that’s extra calories, so stick to one small glass.) 

Servings: 6

Ingredients:

3 boneless, skinless chicken breasts, halved 

2 tablespoons of olive oil

1 cup of coconut milk

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon of Italian seasoning

1/2 cup of parmesan cheese

1 cup of chopped spinach

1/2 cup sun dried tomatoes

 

Add 2 tablespoons of olive oil to a skillet and cook chicken on medium high heat until all pink is gone. Remove the chicken from the skillet for the time being.

Now add 1 cup of coconut milk, 1/2 cup of chicken broth, 1 teaspoon of garlic powder, 1 teaspoon of Italian seasoning, and 1/2 cup of parmesan cheese. Cook over medium high heat as well, stirring until mixture starts to thicken. Now add 1 cup of chopped spinach and 1/2 cup of sun dried tomatoes and cook until the spinach is wilted. Reduce heat and add the chicken back to the skillet and cook for another minute or two.
